Wine Authentication & Profiling

CAF offers advanced wine authenticity testing using Nuclear Magnetic Resonance (NMR) profiling, based on Bruker’s internationally recognised Wine-Profiling™ technology. This method rapidly screens wine for hundreds of natural compounds to detect adulteration, dilution, or quality deviations. By analysing the wine’s unique chemical fingerprint, CAF helps ensure product integrity, quality assurance, and consumer confidence across the South African wine industry.

Honey is one of the foods most vulnerable to fraud, particularly through the addition of undeclared sugars or syrups. Stellenbosch University’s Central Analytical Facilities (CAF) offers advanced honey authenticity testing using Nuclear Magnetic Resonance (NMR) profiling to detect adulteration and confirm product purity. This analytical approach helps protect consumers and producers by ensuring that honey is genuine, high-quality, and free from added sugars or other undeclared substances.

CAF applies advanced NMR-based juice profiling, drawing on Bruker’s Juice-Profiling™ technology, to screen fruit and vegetable juices for quality and authenticity. This method evaluates dozens of chemical parameters from a single measurement in minutes — detecting added sugars, blends, or other irregularities — to ensure that juice products are genuine and free of adulteration.

CAF is exploring NMR-based metabolomic profiling of human body fluids (urine, plasma/serum) using methods developed by Bruker (e.g. Bruker’s B.I. QUANT-UR for urine, B.I. Quant-PS for plasma/serum) under its Avance IVDr / IVDr clinical research platform. These profiling techniques quantify dozens to hundreds of small metabolites in a single measurement, offering a “chemical fingerprint” that can reveal metabolic changes, health states, or biomarkers. However, this application is currently limited to research use only (not for clinical diagnostics), and is being developed and validated further before any routine or regulatory use is supported.
